From Seventy-five Recepts for Pastry, Cakes, and Sweetmeats by Eliza Leslie (1832): This mold was used for baking almond cakes in the 1800s. Molds are not a necessary part of cooking but used to form food into fancy shapes. There were a wide variety of molds, e.g., aspics, jellies, custards and puddings, ices, mousses, vegetable or rice, cake, and so on.
