A Dutch oven is a heavy, cast-iron pan used as an all-purpose cooking utensil. The three short legs allowed the pan to be placed in the coals of the kitchen fire, and the raised lip or "flanges" on the lid allowed more hot coals to be placed on top of the oven in order to distribute the heat evenly.
